Baked Buffalo Wings

Ingredients:

  • 2 lbs chicken wings, room temperature

  • 1 Tbsp baking powder

  • 1 tsp kosher salt

  • ¼ Buffalo Wing sauce (your preference)

Prep Time: 10 minutes

Cook Time: 30-35 minutes

Note: This prep time does not factor in time to either thaw frozen chicken wings or bring cold wings to room temperature. Provide yourself ample time to do this step, as it will ensure getting a crispier result. This recipe suggests the use of a wire rack for baking to promote even crisping.

Preheat the oven to 450F. Using several layers of paper towels, pat your wings completely dry. Don’t be afraid to apply a little pressure to them. Once they are as dry as possible, add them into a large bowl and toss them with the baking powder and kosher salt. Line the wings skin side up onto your wire rack atop an aluminum foil lined baking sheet. Leave about a half inch of space between each wing so they can crisp up. Pat them lightly with a paper towel one last time, and then place in the center of your oven to bake for 30-35 minutes.

Carefully remove the wings from the oven and allow them to rest for five minutes; this gives the skin an opportunity to set before being doused in sauce. Add the wings to a large bowl, grab your favorite hot or buffalo sauce, and toss everything together. Serve with your favorite veggies and dips and enjoy!
