Buffalo Chicken Bites

Feat. Bob’s Red Mill


Ingredients:

  • 1 lb boneless skinless chicken breasts

  • 1 cup buttermilk

  • 1 egg

  • 1.5 cups Bob’s Red Mill Sweet White Rice Flour

  • Garlic powder, onion powder, and paprika (to taste)

  • Corn Oil (for frying)

  • Kosher salt

  • 1 cup Buffalo sauce

  • Scallions (if desired)

Pour the corn oil into a pot that is safe for high temperatures and preheat for several minutes.

Combine the buttermilk and egg, and season with kosher salt. Combine the Bob’s Red Mill Sweet White Rice Flour and the spices with some kosher salt. 


For the dredging process, dip into the wet mixture, then into the dry, and repeat one more time. This will make an extra crispy coating. Let the chicken sit with the coating for a few minutes before frying.


Fry for 5-6 minutes until beautifully golden brown. Season with kosher salt as soon as they come out of the oil. When ready, pour the desired amount of Buffalo sauce into a large bowl and add the fried chicken pieces. Toss everything together and finish with some fresh scallions if desired.

Serve hot and enjoy!
