Chocolate Cake with Strawberry Coulis
Ingredients:
Chocolate Cake
2 cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
¾ cup cocoa powder
½ cup (1 stick) melted butter
1 ½ cups granulated sugar
3 large eggs
1 cup dairy/non-dairy milk
1 tsp vanilla extract
2 tsp baking powder
½ tsp kosher salt
1 Tbsp instant coffee or espresso powder
1 cup chocolate chips
Strawberry Coulis
1 lb fresh strawberries
½ cup granulated sugar
1 Tbsp fresh lemon juice
Preheat the oven to 350F.
In a large bowl, combine the melted butter, sugar, eggs, vanilla, and milk. In a separate bowl, whisk together the Bob’s Red Mill Gluten Free 1-to-1 Baking Flour, cocoa powder, baking powder, kosher salt, and instant coffee. Mix the dry ingredients into the wet, and then fold in the chocolate chips. Pour into a greased cake pan of your choosing, and bake for 30-35 minutes.
For the coulis, remove the greens and chop the strawberries into small pieces. Place the strawberries into a saucepan with the sugar and freshly squeezed lemon juice. Let this simmer over medium heat. The strawberries will release their natural juices and create a thick syrup. Once the strawberries are very tender and aromatic, blend until smooth. Chill the coulis thoroughly before serving.
After the cake and coulis are cooled, slice the cake and generously pour the coulis over the top. Enjoy!
