Easy Chili con Queso
Ingredients:
1 Tbsp avocado oil
¼ yellow onion, minced
4 oz can green chiles
3 garlic cloves, minced
1 lb ground pork
1 Tbsp cumin
1 Tbsp chili powder
2 tsp paprika
1 tsp kosher salt

Cook Time: 15 minutes
Start by allowing your pork to come to room temperature to ensure maximum browning.
Preheat a large skillet (cast iron recommended), over medium heat until lightly smoky. Add half the avocado oil, and then begin to saute the onions for 2-3 minutes. Add the chiles and continue sauteing until very aromatic and lightly charred. Add the garlic in next and saute for 30-60 seconds.
Make space in the center of the skillet and add the remainder of the avocado oil. I like to pre-flatten the ground pork until about ¼” thick, and then season gratuitously with the spices and kosher salt. Add the pork in one sheet into the skillet, apply some light pressure, and then leave it to char for about 3-4 minutes. From here, flip and then begin breaking up the charred pieces into the sauteed mirepoix.
Now that there is some harmony going in the skillet, open your jar of Drippy Dip Salsa con Queso and envelop it into the ground pork. Let this bubble and simmer for a few minutes before serving hot with your crunchy snack of choice!
