Fried Zucchini Sticks
Feat. Bob’s Red Mill Products
Ingredients:
Zucchini Sticks
1 large zucchini
½ cup Bob’s Red Mill Chickpea Flour
¼ cup Bob’s Red Mill Tapioca Flour
3 eggs
¼ tsp kosher salt to taste
2-3 cups frying oil (like corn oil)
Dipping Sauce
2 Tbsp plain Greek yogurt
2 Tbsp mayonnaise
1 Tbsp fresh lemon juice
1 garlic clove, grated
⅛ tsp kosher salt
⅛ tsp cumin
⅛ tsp crushed red pepper
Preheat the oil in a cast iron skillet. Cut the ends off of the zucchini. Cut down the center shortways, and then cut the halves into quarters longways. Next, cut the zucchini longways into strips.
Combine the Bob’s Red Mill Chickpea Flour, Tapioca Flour, and salt together into a bowl. In a separate bowl, whisk 3 eggs. Dredge the zucchini sticks in the flour mixture, then into the egg mixture, and back into the dry mixture for one last time. When all pieces are coated, fry 2-3 per side until golden brown. Season with kosher salt immediately after frying.
For the dipping sauce, combine the Greek yogurt and mayonnaise together. Squeeze in the lemon juice and grate the garlic clove right in. Add the spices and mix everything together. Add a little more lemon juice and salt if needed.
Serve together and enjoy!
