Homemade Garlic Aioli

Ingredients:

  • 1 Egg, large

  • 1 tsp Dijon Mustard

  • 1 - 2 cloves Garlic, smashed

  • 1/2 tsp Kosher Salt

  • 1/8 tsp Black Pepper

  • 3/4 cup Avocado Oil

Yields 8 servings

Cook Time: 0 minutes


Crack one egg into the bottom of a glass measuring cup. Top the egg with the dijon mustard, kosher salt, pepper, and smashed garlic. Cover everything with the avocado oil.

Take your immersion blender and place the tip & blade directly over the egg, covering completely. Starting on low speed, blend the egg into the mustard and garlic pulsing constantly and consistently. Slowly and gradually begin to lift the immersion blender to incorporate and emulsify the avocado oil.

Move the speed to high until a pale yellow and creamy aioli is formed. Taste for seasonings and keep refrigerated.
