Mandel Bread

Feat. Bob’s Red Mill

Ingredients:

  • ½ cup (1 stick) softened butter

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 cup Bob’s Red Mill Cassava Flour

  • ¾ cup Bob’s Red Mill Tapioca Flour

  • 2 tsp xanthan gum

  • ½ kosher salt

  • 1 tsp vanilla extract

  • ½ cup crushed nuts (your choice!)

  • ½ cup chocolate (also your choice!)

  • Dusting of cinnamon (optional)

Preheat the oven to 350F.

In a large mixing bowl, cream together the butter, sugar, eggs, and vanilla. Carefully combine the Bob’s Red Mill Cassava and Tapioca Flours as well as the remaining dry ingredients. These flours tend to make a cloud when mixed too abruptly, so start slowly!


The dough will be thick. Fold in the crushed nuts and chocolate of your choosing, and pour the dough onto a greased baking sheet. Form the dough into a loaf about one inch thick. Optional: dust with cinnamon and granulated sugar. Bake at 350F for 40 minutes. While warm, cut the mandel bread into ¾”-1” slices and then cool. They will resemble biscotti.
