Sweet and Spicy Pulled Chicken

Ingredients:

  • 2 chicken breasts

  • 1 large white onion

  • 2-3 cloves garlic

  • 1 28oz can crushed tomatoes

  • ½ cup dark brown sugar

  • ½ cup apple cider vinegar

  • ¼ cup water (with canned tomato leftover bits)

  • 2 tsp kosher salt

  • 2 tsp paprika

  • 2 tsp cumin

  • 2 tsp chili powder

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • ½ tsp cayenne pepper

  • ½ tsp black pepper

In a Dutch oven or large skillet, cook the thinly sliced onion over medium heat until it begins to get caramelized.  Quickly sauté the garlic.  Lightly season the chicken breasts with salt and pepper before searing on both sides.  Once each side is browned, add the tomato, dark brown sugar, apple cider vinegar, water, and spices.  Stir everything together.  Bring the mixture to a boil, and reduce to a low simmer for 20-30 minutes to cook the chicken.

Pull the chicken breasts out and carefully shred them.  Add the chicken back into the sauce, which should have reduced a bit by now.  Let this simmer together for another 10-15 minutes before serving.

This chicken can be served on sandwiches, on top of nachos, rice, inside tacos or quesadillas, or however else you’d like.  Enjoy!
