Three Cheese Skillet Mac n Cheese

Ingredients:

  • 1 box gluten free macaroni

  • 6-8oz gruyere cheese

  • 5-8oz parmesan cheese

  • 4-6oz goat cheese

  • 3 Tbsp butter

  • 3 Tbsp gluten free flour

  • 3 cups milk 

  • salt

  • ¼ cup gluten free breadcrumbs

Preheat your oven to 400 with your cast iron skillet inside.

Grate the gruyere and parmesan. Reserve the goat cheese for later. 

In a saucepan over medium heat, melt the butter and whisk in the flour to create a roux. Cook for 2-3 minutes until golden brown and aromatic. Gradually whisk in the milk, and continue stirring until the béchamel thickens. Turn off your heat and fold in the gruyere and parmesan. 

Cook your pasta of choice for 5-6 minutes (or 2-3 less than the al dente instructions).  Because we’re finishing in the oven, you want your pasta to be underdone so it can finish cooking without becoming mushy.

Strain your pasta and add it back to the pot to evaporate any residual moisture.  Pour the cheese sauce, and stir to combine.  Carefully pull the preheated cast iron skillet out of the oven, and apply a generous portion of butter to grease the entire surface.  Pour the macaroni mixture into the sizzling skillet.  Crumble the goat cheese generously over the top, and finish wit your choice of gluten free breadcrumbs.

Pop in the oven for 15-20 minutes.  For extra crispy topping, put under the broiler for an additional 2-3 minutes.

Serve hot, and enjoy!
