Mac N Cheese with Chicken and Broccolini

Ingredients:

  • 1-1.5 cups chopped broccolini

  • 1 bag gluten free pasta

  • 2.5 tsp kosher salt

  • 1 cup milk

  • ½ cup reserved pasta water

  • 2 Tbsp salted butter

  • 2 egg yolks

  • 8 oz. parmesan cheese

  • 6 oz. gruyere cheese

  • 6 oz. goat cheese

  • 1 cup shredded rotisserie chicken

Bring a large pot of water to a rolling boil and add two teaspoons of kosher salt. Chop the broccolini into 1.5 inch pieces and prepare a separate bowl for an ice bath. Cook the broccolini in the boiling water for about 30-45 seconds and then careful remove and plunge into the ice water to shock them, stopping the cooking process.

Bring the water back to a rolling boil and cook your pasta for about â…” of the recommended cooking time. Reserve a half cup of the pasta water and strain the pasta.

In the same skillet, combine the milk, pasta water, and butter over medium low heat. Add the pasta and broccolini in and stir together. Quickly add and mix in the egg yolks, maintaining a constant stir over medium low heat until slightly thickened. From here, gradually fold in your cheeses until a velvety sauce is achieved. Fold in the shredded rotisserie chicken, and season to taste.

If desired, transfer to an oven safe baking dish, top with additional cheese, and broil for a few minutes until the top is bubbly and golden. Serve warm and enjoy!
