Baked Lemon Garlic Wings
Ingredients:
20 wings
1.5 Tbsp baking powder
2 Tsp salt
3-4 Tbsp butter
4 cloves garlic
2 Tbsp parsley
Zest of one lemon
Juice of half lemon
Crushed red pepper (to taste)
Preheat the oven to 450. Start by letting the wings come to room temperature. Place them on two layers of paper towels, and cover with two more layers. Press and pat dry, letting them get as dry as possible. This will help them get super crispy in the oven.
In a bowl, toss the dried wings with the baking powder and half of the salt until evenly coated. (Make sure it is baking powder, NOT baking soda.) Place either on an oven safe wire rack atop a baking sheet, or directly on a lightly greased baking sheet. Bake at 450 for 45-50 minutes. When finished, let them rest on the counter for five minutes before tossing. This resting period will help the wings to stay crispy instead of getting soggy.
In a small saucepan, melt down the butter and add the garlic, parsley, lemon zest, salt, and crushed red pepper. Cook these down until aromatic and the garlic is tender. For the last minute of cooking, squeeze in the lemon juice and stir.
Toss the wings in the sauce and serve immediately. Enjoy!
