Cowboy Caviar (Black Bean Salsa)
Ingredients:
¼ cup red onion, finely chopped (¼ of a whole onion)
1 jalapeno, finely chopped (de-seeded if preferred)
1 Tbsp sugar
1 Tbsp white distilled vinegar
2 Tbsp lime juice, freshly squeezed
1 tsp kosher salt
2 Tbsp cilantro, finely chopped
1 15.5oz can black beans, strained and rinsed
1 cup corn (roughly two cobs)
Yields 8 servings
Prep Time: 20 minutes
Finely chop the red onion and jalapeno and place them in a bowl. Add the sugar, vinegar, lime juice, and salt, and toss thoroughly so the sugar dissolves. This will begin to slightly pickle the onion and jalapeno, making them a bit less abrasive and intense in the salsa. Let that rest for at least fifteen minutes, though the longer the better.
Toss in the cilantro, black beans, and corn. Taste and check if additional salt is needed. Chill until ready to serve with tortilla chips, or even atop tacos or nachos.
