Fried Calamari

 

Ingredients:

  • 1 lb squid, portioned

  • 3 Tbsp Bob’s Red Mill Cornstarch

  • ½ cup Bob’s Red Mill Corn Flour

  • ½ cup cold water

  • Kosher salt to taste

  • 2 cups oil for frying

  • Lemon wedges 


Preheat the oil in a pot safe for frying. Allow the squid to come to room temperature and portion appropriately. In one bowl, whisk the cornstarch and water together. In a second bowl, measure out a half cup of the corn flour. Season both with salt.


Soak the squid in the cornstarch slurry and then toss in the corn flour until completely coated. When the oil is ready, carefully drop the squid and cook for thirty seconds to a minute. Remove and let drain on paper towels. Season with kosher salt, a squeeze of lemon juice, and enjoy!
