Late Night Goat Cheese and Tomato Pasta

Ingredients:

  • 1 box gluten free pasta

  • 4 oz. goat cheese

  • 2 Roma tomatoes

  • 1 large shallot

  • 2-3 cloves garlic

  • 2 Tbsp butter

  • Salt to taste

  • Crushed red pepper to taste

  • ½ cup of pasta water

Over medium heat in a skillet, melt down the butter and steep the crushed red pepper. Add and slowly cook down the finely chopped shallot and garlic. Chop the tomatoes into a small dice and add them to the skillet. Let these cook down and stew together while the pasta cooks.

Season the pasta water vigorously with salt and cook until al dente. Melt down the goat cheese and fold it in with the tomatoes. Add the pasta directly into the skillet with about a half cup of the salted pasta water. Stir until creamy, and season to taste.
