Gluten Free Hamantaschen

Feat. Bob’s Red Mill


Ingredients:

  • 2 cups Bob’s Red Mill Oat Flour

  • 1 cold stick salted butter, cubed

  • ½ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 2 tsp xanthan gum

  • Zest of one orange

  • Favorite jam

Yields 16 cookies

In a food processor, blend the cold butter and sugar. Add the egg, vanilla extract, and orange zest and blend together. Add the xanthan gum and gradually add in the Bob’s Red Mill Oat Flour. Blend until a ball is formed. Knead the dough for a few minutes and then chill in the freezer for thirty minutes.

Preheat your oven to 350 F. Portion and roll out the dough in discs. Add about a teaspoon of your favorite jam or filling to the center of the cookies. Press the cookies into little triangles, keeping the jam exposed in the center. 

Bake for 15 minutes and allow to cool before eating. Happy Purim!
