Onion Rings

 

Ingredients:

  • 1 yellow onion

  • 2 cups buttermilk

  • ¾ cup Bob’s Red Mill Corn Flour

  • ¾ cup Bob’s Red Mill Sweet White Rice Flour

  • 1 tsp kosher salt

  • ½ tsp paprika

  • ½ tsp cracked black pepper

  • Dash of cayenne pepper

  • Favorite oil for frying


In a pot or dutch oven, preheat your oil of choice to 350F. Carefully peel and slice your onions into rounds. Separate all the onion rings; there will naturally be a variety of sizes.


In a bowl, add the spices to the buttermilk and whisk together. In another bowl, combine the Bob’s Red Mill Corn and Sweet White Rice Flours. Start by dipping the onions into the flour mixture for a light coating. Next, drop them in the buttermilk until completely coated. Drop the onion rings one last time into the flour mixture and make sure every inch is coated.


When the oil is good and ready, carefully place the onion rings in and cook for 2-3 minutes until golden brown and aromatic. Hit them with a sprinkling of kosher salt and serve hot.
