Watermelon Charoset
Ingredients:
2 cups watermelon, medium dice (½” cubes)
¼ cup pistachios (preferably roasted and salted)
¼ cup fresh mint, chiffonade
3 Tbsp tahini
2 Tbsp honey
½ tsp kosher salt

Cook Time: 0 minutes
Yields 8 servings
Start by carefully dicing your watermelon into ½” cubes. Place them in a large bowl and add the pistachios and mint. Drizzle the tahini and honey all over the watermelon, and sprinkle the kosher salt. Alternatively, you can whisk the tahini, honey, and kosher salt in a separate container to find your preferred balance of sweetness and saltiness. Give everything a toss until the watermelon has a light pink hue. Chill in the fridge until it’s time to serve, as this is best ice cold.
