Caprese+

Ingredients:

  • ½ cup heirloom grape tomatoes, halved

  • ½ cup mozzarella pearls

  • ¼ cup basil, chiffonade 

  • ½ cup cucumbers, persian or baby, large dice

  • ½ cup olives, kalamata, pitted and halved

  • ¼ cup pistachios, roasted and salted

  • 2 Tbsp balsamic vinegar

  • 2 Tbsp extra virgin olive oil (the best you have)

  • 1/4 tsp black pepper, freshly cracked

  • ½ tsp kosher salt

Prep Time: 5 minutes

Cook Time: 0 minutes

Yields 8 servings


Start by prepping and slicing all the ingredients. Combine them in a bowl and give them a good toss so every bite has a variety of textures. Chill in the fridge until it’s time to serve. Add the balsamic vinegar, olive oil, salt, and pepper right “at service” (when you’re ready to serve), and give it a final toss.
